Spicy Cheesy Mini Meatloaves

"The name says it all--these mini meatloaves with cheese, tomatoes and green chilies will be a hit with the whole family any night of the week."

Ingredients :

• 1 pound lean ground beef
• 1/2 pound VELVEETA®, cut into 1/2-inch cubes
• 1/2 cup crushed tortilla chips
• 1 (10 ounce) can RO*TEL Diced Tomatoes and Green Chilies, undrained
• 1 egg

Instructions :

Prep : 10M	Cook : 6M	Ready in : 35M

• Heat oven to 400 degrees F.
• Mix ingredients just until blended.
• Press into 12 muffin pan cups sprayed with cooking spray. Use back of spoon to make indentation in center of each. Place muffin pan on foil-covered rimmed baking sheet.
• Bake 20 to 25 min. or until meatloaves are done (160 degrees F).

Notes :

• Serve with 1/2 cup of your favorite cooked pasta and 1/2 cup of sautéed vegetables to round out the meal.
